Stylish Recipe: Vegan Brownies

I am trying to venture out and try new things and while the kitchen has always scared me, I am starting to become less and less afraid of it. I have been pinning away recipes I am dying to try and yesterday since I had some free time I finally ventured to to the market and decided I was going to bake. My girlfriend is having a Superbowl Sunday party this weekend and I told her I'd bring dessert, so this is one of the many options I am trying to decide if I will bring. Brownies are amazing, no matter what, but vegan brownies are even better. I hate having to buy eggs and such for one recipe and am so glad that this recipe didn't call for them. I am not a vegan by any means, but this recipe was just too easy to pass up so here's how you make the most delicious and chocolate-y brownies! Don't be alarmed when you see applesauce, it makes them so much more delicious!

Here's what you need:
1/2 cup vegetable oil
1 1/2 cups sugar
1 tablespoon vanilla
1/2 cup unsweetened cocoa
4 ounces (about 1/2 cup) unsweetened applesauce
2 ounces unsweetened chocolate, melted
1 teaspoon salt
1 1/2 cups flour
1 cup semi-sweet chocolate chips (Ghiradelli brand)

1. Preheat oven to 350 degrees. Line a 9x9” (I used an 8x8 which was fine) pan with cooking spray.
 2. Stir together oil and sugar. Stir in vanilla, cocoa, and applesauce.
3. Add melted chocolate and salt, stir until smooth.  (Melt the chocolate for about 45 seconds in the microwave and it will be just right)
4. Slowly stir in flour. Add chocolate chips.
5.  Pour into prepared pan and bake 25-28 minutes.
6. Let cool before cutting and top with a sprinkling of powdered sugar for a pretty presentation!

Easy enough right? They were delicious too and so easy and quick to make!
So until next time... Live Stylishly
