Stylish Recipe: Warm Spinach Salad with Blue Cheese

I have mentioned time and time again I am probably the worlds worst chef, but one of my new years resolutions this year was to start cooking more and get better! I received this amazing cookbook last year in a PopSugar Must Have Box and have no idea how I went this long without cooking. The author, Jessica Seinfeld, shares the easiest recipes that even the worst chefs, like myself, can make! I am excited to share probably my favorite recipe from the book today, Warm Spinach Salad with Blue Cheese! If you know me, I love a great salad, but a salad with just italian dressing can get quite boring after awhile which is why this recipe is so perfect! It takes no more ten minutes and is so delicious, I have already made it about 6 or 7 times! 
Here's What You Need:
1 large bunch of fresh spinach (I used the salad in a bag and it worked just as fine!)
2 T. Extra Virgin Olive Oil
2 T. Honey
2 T. Red Wine Vinegar
2 T. Dijon Mustard
1/4 tsp. Kosher Salt
1/4 tsp. Freshly Ground Black Pepper
1 cup of crumbled blue cheese

Step 1: Wash and dry the spinach and place in salad bowl. 
Step 2: Combine the oil, honey, vinegar, mustard, salt, and pepper in a medium skillet on the stove whisking together for about 2 to 3 minutes. It will start to bubble and pop and usually thats when I know it's done.
Step 3: Pour the warm vinaigrette over the salad and toss well. Top with the crumbled blue cheese and you're set!
SO easy, right? The original recipe called for a red onion that you mix in with the salad, but I opted to leave that out. This is the perfect side salad or even meal paired with a great glass of wine!
